Shiitake Mushroom Kimchi Quesadilla
Ingredients

. 1/5 cup of Fresh Kimchi(You can use 1 Jayone canned Kimchi)  
. ½ cup of Shittake Mushroom diced to bite size  
. Tortilla of your choice (We used the medium size for this recipe)  
. ½ cup of Mexican cheese (Substitute it for a vegan option to make this a vegan dish)  
. Olive Oil  
. Ajumma Republic Fire Chicken Sauce  
. Toasted Sesame Seeds and chopped Parsley for garnish

How to Make It

1. Soak shiitake in warm water for 20~30 minutes and squeeze shiitake mushroom slightly to remove the water.  

2. Add 21-2 Tbsp of Olive oil to pan on low heat.  

3. Add Kimchi and shiitake mushrooms and stir until cooked.  

4. Store cooked Kimchi and shiitake mushroom in a separate bowl.

5. Add tortillas on a clean pan over low heat.  

6. Add cheese, cooked Kimchi and shiitake mushrooms on half of the tortilla then close.  

7. Heat/cook until cheese melts.  Then serve!!
