Shiitake Mushroom Kimchi Quesadilla

Today we’re posting another super easy and cheesy recipe that you can add the shiitake mushrooms. You can substitute the cheese for a vegan option to make this dish Vegan as well.

 

What you’ll need:

  • 1/5 cup of Fresh Kimchi(You can use 1 Jayone canned Kimchi)

  • ½ cup of Shittake Mushroom diced to bite size

  • Tortilla of your choice (We used the medium size for this recipe)

  • ½ cup of Mexican cheese (Substitute it for a vegan option to make this a vegan dish)

  • Olive Oil

  • Ajumma Republic Fire Chicken Sauce

  • Toasted Sesame Seeds and chopped Parsley for garnish

     

     

     

     

     

     

     

     

     

How to make:

  1. Soak shiitake in warm water for 20~30 minutes and squeeze shiitake mushroom slightly to remove the water.

  2. Add 21-2 Tbsp of Olive oil to pan on low heat.

  3. Add Kimchi and shiitake mushrooms and stir until cooked.

  4. Store cooked Kimchi and shiitake mushroom in a separate bowl.

  5. Add tortillas on a clean pan over low heat.

  6. Add cheese, cooked Kimchi and shiitake mushrooms on half of the tortilla then close.

  7. Heat/cook until cheese melts.

  8. Then serve!!

* For people who love spicy-ness like me, add a Tbsp of our Fire Chicken sauce over the ingredients before closing the tortilla in half.
