Kimchi Cheese Pizza Pancakes


On rainy days, Koreans crave Korean pancakes and Makgeoli (Rice Wine). Some say it’s because the sound of rain reminds them of making pancakes. But just as people crave a hot soup on a chilly day, we crave pancakes.
We used our Kimchi Pancakes today and also added a twist. We added cheese, corn, and olives on top of the Kimchi Pancake and made it like a pizza. Who doesn’t like adding cheese to everything?

Ingredients needed:
Jayone Kimchi Pancakes
Mozzarella cheese
Olives, diced
Canned Corn, water drained
(These are the topping we used for our recipe, but you can add whatever you like)
How to make:
On low heat, add 2-3 Jayone Kimchi pancakes to your pan and cook on each side for 2 minutes. Make sure they are not overlapping so we can add toppings on each pancake.
Add toppings: Cheese, olives, and corn
Close the lid and cook on low heat for 1 minutes
Turn of fire and leave the lid on until cheese is completely melted. Then serve!
